Quick & simple salad dressing


  • 1 tbsp cider vinegar
  • 1 crushed garlic close
  • ½ tsp finely grated ginger
  • Salt & pepper
  • 1 tsp sweet chilli sauce
  • 1 tsp Tamari (gluten free) or soy sauce
  • 1 tsp honey (or if you want to be strictly vegan, brown rice syrup or agave nectar)
  • 1 tbsp tahini
  • 2 tbsp olive oil


I usually put the salt into the vinegar so that it can dissolve before adding the oil, but otherwise just put everything in a jug and whisk together (or in a jam jar, with the lid on, and give it a good shake).  The quantities can be tweaked, to taste – I’ve made it without ginger or garlic and it was still good.
